Our Story
Nathalie & Jérôme
We both come from the South of France, the French Riviera. We both opened our first restaurant in January 2000, in which we paid tribute to the flavours of our region by offering typical French dishes. Lovers of challenges, we then opened a second bistro restaurant that allowed us to innovate in the magic of textures and cooking. The third restaurant gave us the opportunity to discover the world of French bakery and pastry-making. This was the springboard for opening a café-restaurant in Conroe, Texas, which we discovered on a tourist trip. We fell in love with the town, its people and the establishment on the corner of Thompson Street and Davis Street, now known as Paulette Café.
